Arokya menu-(16)Egg Gravy

Agasthiar Arokyamenu

Egg when we cook 1/2 boil is healthy.But all of us do not fancy in taking 1/2 boiled eggs;instead all like full boil. When we think of eating rice or bread with egg gravy it is much tastier. So let us try one recipe.

Ingredients
Coconut oil 2 table spoon
egg   boiled              4
Coconut ( grated )    ½
Dry red chilli             10
Cumin                      1 spoon            
Garlic                        4
Ginger                    1 inch piece
Turmeric powder        1 spoon
Tamarind  water        to taste
Onion (cut finely)        1
Tomato (cut finely)     2
Cardamon 4
Salt    :  as needed
Curry leaves     1/4 hand full
Coriander leaves    :    if needed
Method
Cut eggs into two.
Grind coconut, chilli, cumin,  garlic, ginger and curry leaves  to a paste.
Mix this paste with turmeric and tamarind water.
Heat coconut oil in a frying pan.
Add tomato, onion and fry till golden.
Add the mix, a cup of water and boil well.
After five minutes add eggs.
Remove the pan from the stove after 5 minutes.
Garnish with curry leaves again and fresh onions  and coriander leaves if needed.
